Whole Masoor Amti - A Maharashtrian special

Ingredients
  

  • ½ cup Whole Masoor dal pre soaked overnight and pressure cooked
  • 2 inch Ginger
  • 5 Garlic cloves
  • 1 Green chili
  • 1 Onion medium size finely chopped
  • ½ cup Dry coconut grated and lightly roasted
  • ½ tsp Turmeric
  • ½ Kashmiri red chili powder
  • Salt as per taste
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 2 Cloves
  • 2 Bay leaves
  • 1 inch Cinnamon stick
  • 1 tsp Organic jaggery powder
  • 2 tsp Tamarind paste
  • 2 tsp Cold pressed coconut oil

Method
 

  1. Make a paste of dry roasted coconut, ginger, garlic and green chili using a blender.
  2. Take 2 tsp of cold pressed coconut oil in a pan, add bay leaves, a cinnamon stick and cloves.
  3. Add finely chopped onion and let it fry for some time.
  4. Add the paste and let it cook well..
  5. Add red kashmiri chilli powder and fry for 10 seconds.
  6. Now add the remaining masala and cooked masoor dal.
  7. Fry for 1 minute, add salt and water. You can adjust the consistency as per your preference.
  8. Add jaggery and tamarind paste and let it simmer in a slow flame for 4 to 5 minutes.
  9. Turn off the gas
  10. Add fresh coriander as a garnish before serving.
  11. Serve hot with rice, chapati or with jowar bhakri.

Notes

Masoor dal is a powerhouse of antioxidants which can effectively reduce cell damage.
It is rich in protein and vitamin A, C and E.
One can use any lentil as per availability.
