Fluffy Jowar Pancakes

Ingredients
  

  • ½ cup sorghum flour, jowar flour
  • ½ cup ragi flour, finger millet flour
  • ¼ cup desiccated coconut
  • ½ teaspoon Ceylon cinnamon powder
  • ½ cup almond milk or A2 milk as per suitability
  • ¼ cup raw cacao powder
  • Raw honey to garnish

Method
 

  1. Mix all the ingredients in a bowl well with a spatula and beat it to a batter consistency.
  2. Heat the pan to medium heat. Lightly grease with a few drops of oil and gently pour the batter.
  3. When small bubbles form, flip the pancake over and cook for approximately 10 seconds.
  4. Serve hot and garnish with raw honey.
Power tips and variations
  1. You can opt to use amaranth flour if jowar flour is unavailable.
  2. Leave the batter to rest aside for 30 minutes. It will allow the flour to absorb the liquid and make the pancakes fluffier.
