Amla Candy Pellets – Desi Digestive Crunchies

Say bye-bye to store-bought sugary candies laden with preservatives and make these delicious amla candies at home.

Ingredients
  

  • 250 gm of amla/Indian gooseberry remove the seeds by slightly soaking them in hot water and cutting them into slices
  • 150 gm chemical-free jaggery powder
  • 2 tsp rock salt
  • 1 tsp jeera or cumin powder

Method
 

  1. Coat amla with jaggery, cumin powder, and rock salt.
  2. Keep this mixture aside for 2 days.
  3. You will notice that the amla lets out some water.
  4. Sieve this water but don’t discard it. You can use it for other cooking preparations.
  5. After removing the water, sundry the amla for 2 to 3 days.
  6. Avoid drying it completely. Ensure there is a little leftover moisture.
  7. Once done, just sprinkle jaggery and store them in airtight containers.

  1. If the sour taste of amla is a dealbreaker for you, this candy version can be the perfect fix.
Variations
  1. To experiment with a savory version, blend roasted cumin/jeera, bishop's weed/ ajwain, and pepper finely, and sprinkle this powder on your amla.
