Ingredients
  

  • 1 cup almonds, soaked overnight
  • 4 cups of A2 milk
  • ½ tbsp organic jaggery to taste
  • A pinch of saffron strands
  • ¼ tsp cardamom powder, for flavor
  • Chopped nuts, cashew nuts, pistachios, for garnishing

Method
 

  1. Grind the pre-soaked almonds into a fine paste using a little A2 milk.
  2. In a pan, heat the remaining milk and let it come to a boil.
  3. Add the almond paste and stir well. Simmer on low heat for about 15-20 minutes, stirring occasionally.
  4. Add saffron strands and cardamom powder to the kheer and mix.
  5. Sweeten the kheer with jaggery, adjusting the amount to your taste preference.
  6. Continue to cook until the kheer thickens to the desired consistency.
  7. Remove from heat and let it cool.
  8. Garnish with chopped nuts before serving.

  1. One can use coconut milk as an alternative to A2 milk. The coconut flavor pairs well with the almond's nuttiness, creating a delightful twist on the traditional recipe.
  2. To incorporate dates instead of jaggery, you can soak them in warm water to soften them and then blend them into a paste.

Ingredients
  

  • 2 cups sweet potatoes, boiled and mashed
  • 1/2 cup sama rice, barnyard millet, soaked for 8 hours
  • 1/4 cup roasted peanuts, coarsely crushed
  • 1 green chili, finely chopped
  • 1 tsp cumin seeds
  • 1 tbsp chopped fresh coriander leaves
  • Rock salt, sendha namak to taste
  • ½ tbsp A2 ghee for shallow frying

Method
 

  1. In a mixing bowl, gently combine boiled and mashed sweet potatoes, drained sama rice, crushed peanuts, chopped green chilies, cumin seeds, chopped coriander leaves, and rock salt.
  2. Divide the mixture into equal portions and shape them into round or oval tikkis.
  3. Heat a pan or tawa and add a little A2 ghee for shallow frying.
  4. Place the tikkis on the pan and cook on medium heat until they turn golden brown and crispy on both sides.
  5. Once cooked, remove the tikkis from the pan. Serve the sweet potato sama tikkis hot with yogurt or chutney.

  1. Feel free to incorporate the grated vegetables of your choice. You can alternate sweet potatoes with grated raw banana or raw banana flour too.
